Looking for a little something ‘yum’ to cook up with the kids these school holidays and Easter ?

Our kids and teens classes are in full swing at Relish Mama these holidays. Sharing a delicious recipe from Catherine’s class yesterday.

Chocolate cupcakes with Easter nest …….a little something lovely for the school holidays
Makes 24 Cupcakes

 

250g butter, chopped
200g dark chocolate, chopped
2 cups caster sugar
225g self-raising flour
120g plain flour
40g cocoa powder
2 eggs, lightly beaten

For the Chocolate icing:

125g butter, chopped
1 ½ cups icing sugar (mixture)
3 tablespoons cocoa powder
2-3 tablespoons milk

To Decorate:

100g white chocolate, melted
100 milk chocolate, melted
Mini Easter Eggs – candy coated or chocolate …..the choice is yours

 

Preheat oven to 180 degrees.

Line 2, 12 hole cupcake muffin pans with paper cases.

Place butter, 1 ½ cups cold water, chocolate and caster sugar in a saucepan over medium heat. Cook, stirring for 5 minutes or until melted. Stand for 10 minutes to cool.

Sift flours and cocoa into a large bowl. Gradually pour in cooled chocolate mixture, stirring with a wooden spoon until mixture is combined and smooth. Add egg and stir until combined.

Spoon mixture into prepared pans. Bake for 20 minutes or until a skewer inserted in the centre of one of the cakes comes out clean. Stand in pans for 5 minutes. Transfer to wire rack to cool.

*NOTE – Making the chocolate shards is a tricky task! Ask an adult to help here.

To make chocolate curls, spread the melted white chocolate and melted milk chocolate separately over the base of 2 upturned baking trays to a thickness of 1cm. Allow the chocolate to set firm. Using a large sharp knife, carefully run the blade at an angle down the length of each set chocolate to form curly shards. Set shards aside. ).

To make the icing, use an electric mixer to beat the butter until pale. Gradually add the cocoa powder, icing sugar and milk in batches, beating well between each batch until well combined. Spread icing over each cupcake.

Decorate with chocolate curls to look like a nest and add Easter Eggs.
