Produced by roasting young, green Australian wheat over a flame, Freekeh’s nutty flavour and crunchy texture make it perfect for salads. The cracked grain greatly reduces the required cooking time.

Freekeh and chickpea salad
Freekeh is green wheat, which is unripe wheat grains that are partially smoked to cook them. You can find Freekah in most good food stores and health shops. You prepare it in a similar manner to burghul.
2 tbsp olive oil
1/2 onion, finely diced
85g (1/2 cup) freekeh
60g (1/4 cup) almonds (skin on), toasted
60g pistachios, toasted
1/4 cup chopped parsley
1/4 cup chopped coriander
2 tbsp chopped mint
1/2 preserved lemon, soaked and pulp removed, diced finely, optional
1 x 400g tin chick peas, drained and rinsed
1/2 cup pomegranate seeds, optional
Heat a small saucepan over a medium heat. Add 2 tbsp olive oil and onion and cook for 3–4 minutes, stirring often until onion softens. Add freekah and 180ml (2/3 cup) water and bring to the boil. Reduce to a simmer and cook for 10 minutes until all the liquid has been absorbed and freekah is tender. Remove from saucepan and tip into a bowl and allow to cool slightly.
Add nuts, herbs, preserved lemon, chick peas and pomegranate seeds if using and dressing to the freekah and toss to combine.
Spoon freekah onto a large platter and serve.
